Food safety

Temperature and time figures for meat, poultry and leftovers follow published USDA Food Safety and Inspection Service guidance current as of the review date shown on each page. Always verify doneness with a food thermometer. If you are cooking for people at higher risk — young children, pregnant people, older adults or the immunocompromised — follow USDA minimums strictly (for example, cook whole cuts to 145°F with rest, not to chef-style “medium rare”).
