Why flour is the ingredient that ruins bakes

Flour compresses. The same measuring cup can hold 120 g of gently spooned flour or more than 150 g of scooped-and-packed flour. Why do different websites list different gram weights for a cup?

Because a “cup” of a dry ingredient depends on how it was packed. Published charts choose a measuring convention: this site uses King Arthur Baking’s weight chart (flour spooned and leveled) for solids and the 240 ml US legal cup for liquids, and says so on every conversion.

Is it better to bake by weight or by volume?
